The display driver is tested with 2 inch TFT displays (i.e. 1152 x 864 pixels) and a 1.8 inch LCD (i.e. 1280 x 800 pixels).

It is a common practice to serialize parallel/SPI I/O on consumer devices, especially ones that are often moved between different computer systems and with limited resources. Some commercial devices have a Serial Attached SCSI (SAS) channel that you can use for serializing access to the SPI device. This is actually more common in devices that are handled by desktop software, as many will not have an internal USB port.
Having said that, I'd highly recommend using serial rather than parallel. Serial is much easier to implement and much less hassle. If you're using a more standard parallel display, there are already several libraries out there that allow you to use that parallel port with a serial port, so the whole process becomes very simple.
